Pecan Tartlets

Cupcakes with hazelnut filling are a must on the Christmas table. Enjoy whole pecans in a crispy butter tartlet.

Ingredients
- 2 cups butter
- 1 package of cream cheese
- 2 1/2 cups all-purpose flour
- 1 cup powdered sugar (or 1/2 cup¨granulated sugar)
- 1/2 cup butter (melted)
- a teaspoon of vanilla extract
- 1/2 heaping cup chopped pecans
- 3 large eggs
Method
- Mix the butter, cream cheese and cake flour together.
- Press the resulting dough into muffin tins or cups.
- Beat eggs, and gradually add sugar.
- Add the melted butter and vanilla.
- Add the nuts and mix well.
- Fill the cups ½ to ¾ with the nut filling.
- Bake at 350°F for about 20 minutes until they are light brown.
- Sprinkle with powdered sugar before serving.
