Pecan Circle Cookies made of Almond Flour

These circle cookies are so delicious that you will definitely want to bake them throughout the year. You will also love them because their preparation is very simple.
Ingredients:
- 1 cup of almond flour
- 1/2 cup of softened butter
- 1/4 cup of powdered sugar
- 1/2 cup of finely ground pecans (make sure the pecans are ground finely – otherwise, the flour will not come together in the dough).
- 1/2 teaspoon of salt
- 1/2 teaspoon baking powder
- 2 teaspoons of vanilla extract
- 20 pecan halves
Method:
- Preheat the oven to 360°F and line a tray with baking paper.
- Mix the almond flour and butter in a bowl and make a soft dough.
- Add finely ground pecans, sugar, salt, baking powder, vanilla extract and mix well again.
- Form small balls from the kneaded dough and press half a pecan into each.
- Bake for 10-12 minutes until the cookies are golden brown around the edges.
If you bake the cookies longer than advised in the recipe, they will dry out and fall apart.
Thanks to pecans, these cookies are addictively crunchy, soft, tender, and taste like butter.
