Peanut Christmas cookies

These delicious peanut cookies taste great, especially with a cup of black tea.
Ingredients:
- 1 cup plain flour
- 1/2 cup of freshly shelled peanuts
- 1/2 cup of butter
- 1/3 cup of powdered sugar
- 2 tablespoons of cane sugar
- 1 teaspoon of vanilla extract
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Method:
- Preheat the oven to 356°F.
- Place the shelled peanuts on a baking sheet lined with baking paper and bake for approximately 10 minutes.
- Leave to cool.
- Then, pour them together with 1/2 cup of flour into a food processor and mix finely.
- Beat the butter and sugar until creamy, then add the vanilla.
- Add sifted flour, salt and baking powder to the buttercream.
- Mix and then add the ground peanuts.
- Do not mix more than necessary.
- Transfer the dough to the work surface, knead it briefly and form a ball.
- Wrap it in cling film and put it in the fridge for an hour.
- Preheat the oven to 356°F and line the trays with baking paper.
- Roll out the cooled dough with a rolling pin to approximately half an inch thick.
- Cut different shapes with cookie cutters.
- Place the peanut cookies on a baking sheet and sprinkle with cane sugar before putting them in the oven.
- Bake until golden brown for approximately 15 minutes.
