No-Bake Gingerbread Date Balls

The preparation of these date balls only takes a few minutes, and they disappear from the plates even faster ๐Ÿ™‚ They smell and taste like gingerbread and can be prepared and frozen well in advance.

Ingredients

  • 8 ounces dried, pitted dates
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/16 teaspoon allspice
  • 1/16 teaspoon ground cloves
  • 1/16 teaspoon ground ginger
  • finely chopped pecans (you’ll need about 1/4 – 1/3 cup chopped pecans for the entire batch) + optional for coating

Method

  • Place all ingredients in a food processor.
  • Process the date mixture until it reaches the desired consistency (from a bit chunky and chewy to silky-smooth).
  • Scrape the bowl once or twice if necessary.
  • If you have trouble processing the dates because they are extra dry, add a drop or two of water.
  • With very slightly dampened hands (to prevent sticking), roll the date mixture into 1-inch balls and lay the balls on parchment or wax paper to dry.
  • If you are coating the date balls in chopped pecans, do so immediately after forming them while they are still sticky.
  • Press the pecans lightly into the date balls to make them stick better.
