No-Bake Gingerbread Date Balls

The preparation of these date balls only takes a few minutes, and they disappear from the plates even faster ๐ They smell and taste like gingerbread and can be prepared and frozen well in advance.
Ingredients
- 8 ounces dried, pitted dates
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/16 teaspoon allspice
- 1/16 teaspoon ground cloves
- 1/16 teaspoon ground ginger
- finely chopped pecans (you’ll need about 1/4 – 1/3 cup chopped pecans for the entire batch) + optional for coating
Method
- Place all ingredients in a food processor.
- Process the date mixture until it reaches the desired consistency (from a bit chunky and chewy to silky-smooth).
- Scrape the bowl once or twice if necessary.
- If you have trouble processing the dates because they are extra dry, add a drop or two of water.
- With very slightly dampened hands (to prevent sticking), roll the date mixture into 1-inch balls and lay the balls on parchment or wax paper to dry.
- If you are coating the date balls in chopped pecans, do so immediately after forming them while they are still sticky.
- Press the pecans lightly into the date balls to make them stick better.
