No-bake Coconut Balls

If you don’t have ricotta at home, don’t worry; you can replace it with Greek yogurt or mascarpone. Just keep an eye on the consistency to form balls. If the batter is thin, add more coconut flour.

Ingredients:

  • 1/2 cup of coconut flour
  • 1 cup of ricotta cheese
  • 1/4 cup of sugar
  • grated rind from 1 lemon
  • 2 tbsp grated coconut for decoration

Method:

  1. First, thoroughly mix the ricotta and sugar in a bowl.
  2. Add the lemon zest and the coconut flour.
  3. Mix until you have a soft yet firm mixture that you can form into balls.
  4. You will need approximately one full teaspoon of batter per ball.
  5. Roll the dough in coconut flour to make it easier to work with, and roll it out in your hands.
  6. Finally, wrap the balls in grated coconut.
  7. Store in the refrigerator.
