No-bake Coconut Balls

If you don’t have ricotta at home, don’t worry; you can replace it with Greek yogurt or mascarpone. Just keep an eye on the consistency to form balls. If the batter is thin, add more coconut flour.
Ingredients:
- 1/2 cup of coconut flour
- 1 cup of ricotta cheese
- 1/4 cup of sugar
- grated rind from 1 lemon
- 2 tbsp grated coconut for decoration
Method:
- First, thoroughly mix the ricotta and sugar in a bowl.
- Add the lemon zest and the coconut flour.
- Mix until you have a soft yet firm mixture that you can form into balls.
- You will need approximately one full teaspoon of batter per ball.
- Roll the dough in coconut flour to make it easier to work with, and roll it out in your hands.
- Finally, wrap the balls in grated coconut.
- Store in the refrigerator.
