Mozart balls with walnuts

This version of the recipe is also healthier. Above all, it does not contain refined sugars.
INGREDIENTS
Marzipan:
- 1/2 cup almond slices (or whole almonds)
- 3 tablespoons of agave syrup
- 10 drops of almond extract
- pinch of salt
Pistachio Marzipan:
- 4 tablespoons almond slices (or whole almonds)
- 1/2 cup of pistachios
- 3 tablespoons of agave syrup
- ½ teaspoon of lemon juice
- pinch of salt
Chocolate Nougat:
- 1/2 cup of walnuts
- 3 tbsp of cocoa butter
- 5 teaspoons of agave syrup
- 2 spoons of cocoa
- pinch of salt
chocolate topping:
- 3 tbsp of dark chocolate
- 3 tbsp of cocoa butter
METHOD
- Roast the walnuts in an oven heated to 340°F for 15 minutes.
- In the meantime, blend the almonds almost to butter (the fat will start to release).
- Then, add the rest of the marzipan ingredients and mix until it is smooth.
- Then, knead the dough thoroughly and put it aside.
- To prepare pistachio marzipan, we will need pistachios and almonds.
- Put both in a blender and mix again for 3-5 minutes.
- Then, add the rest of the ingredients for the preparation of pistachio marzipan, mix, knead, and set aside.
- For the chocolate nougat, we will need roasted walnuts, which we will mix with permitted cocoa butter.
- Then add the rest of the nougat ingredients, mix, knead, and set aside.
- Now we can shape.
- We make balls from the pistachio dough.
- Wrap each ball with the nougat dough by making a slightly larger ball, flatten it, and wrap the pistachio ball in it.
- We proceed in the same way with the next layer of marzipan.
- Finally, we dip into the chocolate coating made from cocoa butter and chocolate over a water bath.
