Macadamia Nut Tarts

After a long and demanding Christmas day, treat yourself to a sweet and delicious dessert.
These Nutty Maple Syrup Cookies are the perfect way to end the day and will definitely put a smile on your face, as will these Christmas Snow Meringue Recipes .
Ingredients
- puff pastry
- 3 large eggs
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup pure maple syrup
- 1/4 cup (melted)
- 4½ oz macadamia nuts
- Icing sugar
Method
- Preheat the oven to 350°F.
- Roll out the puff pastry and cut circles out of it.
- Grease the cupcake tins, then line them with the cut out circles.
- Prick the bottom with a fork and let cool for 10 minutes.
- Line the molds with the dough with baking paper and fill them with weights or rice.
- Bake for 5 minutes, then remove the paper and weights and bake for 5 minutes or until the cupcake is crisp.
- Meanwhile, whisk together the eggs, brown sugar, vanilla extract, maple syrup, and melted butter in a bowl.
- Pour the mixture into the cups.
- Divide the macadamia nuts evenly between the cupcakes, then return to the oven and bake for about 25 minutes or until the cupcakes are golden.
- Allow the walnut cupcakes to cool for about 10 minutes, then dust them with powdered sugar.
