Lemon Linzer Cookies

Ingredients

  • 2 ½ cups flour
  • ⅓ cup powdered sugar
  • coarse sugar for sprinkling
  • 9 tablespoons of unsalted butter
  • 2 egg yolks
  • 1 lemon

Method

  • Mix the flour and sugar in a large bowl and add the butter and egg yolks.
  • Squeeze the lemon and pour the fresh juice into the mixture. Mix everything well.
  • Using your hands, begin kneading the dough until everything comes together and the dough is shiny. This will take about 5-7 minutes.
  • Once the dough is ready, form it into a “ball” and cover the bowl with cling film. Then, place the dough in the refrigerator and let it cool.
  • While the dough is resting, preheat the oven to 350°F.
  • Once the dough is set, remove it from the fridge and roll it out on a floured surface. The dough should be rolled out to about 0.1 inches.
  • Now, it’s up to you what kind of cutter you choose. Whether you want to make lemon circle-shaped cookies or cookies in the shape of stars, we have chosen the bird (owl) shape for this recipe.
  • Beat one egg in a bowl. Brush each cut-out cookie separately with this egg. This will give the cookies a golden tinge when baking.
  • Sprinkle the candy with coarse sugar. It will create a beautiful snow effect.
  • Place the prepared cookies in the oven and bake for 12-15 minutes until they start to brown nicely.
  • Let the finished cookies cool and serve.

Lemon Linzer Christmas Cookies will last 3-4 weeks in the fridge if stored in an airtight container.
