Lemon Balls

They look like snow globes and are perfect for the Christmas season. In Canada, they are a typical Christmas cookie and are called crinkle or crackle cookies. They taste heavenly sweet and lemony. Bake them this year too!
Ingredients:
- 1 1/2 cup of almond flour
- 1/4 cup of granulated sugar
- 1/4 teaspoon of baking soda
- 1 teaspoon of lemon zest
- 1 1/2 tablespoons of freshly squeezed lemon juice
- 2 large eggs
- Icing sugar for coating
Method:
- Preheat the oven to 310°F.
- Mix the almond flour, sugar, baking soda, lemon zest, and lemon juice in a large bowl.
- Beat the egg whites until stiff, add them carefully to the almond mixture, and make a dough.
- Roll pieces of dough with a spoon, roll them into a ball, and roll them in powdered sugar.
- Place the candy on a baking sheet lined with baking paper and bake for 14-16 minutes, until the pieces are slightly golden brown.
