Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 cup ground almonds
  • 1/2 cup honey
  • 1/2 cup molasses
  • 1/3 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 eggs
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • Powdered sugar for dusting

Instructions:

  • Whisk together the flour, ground almonds, baking powder, cinnamon, ginger, cloves, nutmeg, and salt in a large bowl.
  • Cream the butter and granulated sugar in a separate bowl until light and fluffy. Beat in the eggs, one at a time, then add the honey and molasses, mixing well.
  • Gradually stir in the dry ingredients until a thick dough forms. Cover and chill for at least 1 hour or overnight.
  • Preheat your oven to 350°F. Grease and flour a 9×13-inch baking dish.
  • Spread the dough evenly in the prepared baking dish. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the Lebkuchen cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Dust the Lebkuchen with powdered sugar before slicing and serving.
  • Store in an airtight tin with baking paper between each layer.
