Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 cup ground almonds
- 1/2 cup honey
- 1/2 cup molasses
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 eggs
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp ground cloves
- 1/4 tsp ground nutmeg
- Powdered sugar for dusting
Instructions:
- Whisk together the flour, ground almonds, baking powder, cinnamon, ginger, cloves, nutmeg, and salt in a large bowl.
- Cream the butter and granulated sugar in a separate bowl until light and fluffy. Beat in the eggs, one at a time, then add the honey and molasses, mixing well.
- Gradually stir in the dry ingredients until a thick dough forms. Cover and chill for at least 1 hour or overnight.
- Preheat your oven to 350°F. Grease and flour a 9×13-inch baking dish.
- Spread the dough evenly in the prepared baking dish. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the Lebkuchen cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust the Lebkuchen with powdered sugar before slicing and serving.
- Store in an airtight tin with baking paper between each layer.
