Lard dimple Christmas cookies with jam

Lard cookies may not be that well known nowadays, but our grandmothers and great-grandmothers used lard to bake Christmas cookies. You don’t have to worry about the taste; there is no smell of pork. On the contrary, it creates an irresistible delicacy and fragility.

Ingredients:

  • 1 cup buttermilk
  • ½ cup semi-coarse flour
  • ½ cup plain flour
  • 1 cup melted lard (cooled)
  • 1 heaping teaspoon of baking soda
  • 1/3 cup sugar
  • ½ teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1 spoon of cocoa

    Method:

    • Mix all the dry ingredients and add the buttermilk and melted lard.
    • Mix the dough properly.
    • Form small balls from the finished dough.
    • Place on a baking sheet lined with baking paper.
    • Press each ball onto the pancake and make a well in the middle.
    • Fill the holes with jam.
    • Bake at 365°F for about 10 minutes.
    Even lard cookies can be easily prepared with dimples
