Lard dimple Christmas cookies with jam

Lard cookies may not be that well known nowadays, but our grandmothers and great-grandmothers used lard to bake Christmas cookies. You don’t have to worry about the taste; there is no smell of pork. On the contrary, it creates an irresistible delicacy and fragility.
Ingredients:
- 1 cup buttermilk
- ½ cup semi-coarse flour
- ½ cup plain flour
- 1 cup melted lard (cooled)
- 1 heaping teaspoon of baking soda
- 1/3 cup sugar
- ½ teaspoon of salt
- 1 teaspoon of cinnamon
- 1 spoon of cocoa
Method:
- Mix all the dry ingredients and add the buttermilk and melted lard.
- Mix the dough properly.
- Form small balls from the finished dough.
- Place on a baking sheet lined with baking paper.
- Press each ball onto the pancake and make a well in the middle.
- Fill the holes with jam.
- Bake at 365°F for about 10 minutes.
