Izidor cupcakes with delicious cream

The preparation of this type of candy is quite laborious and time-consuming, but the result is worth it.
Ingredients:
Cupcakes
- 210 g plain flour
- 130 g of butter
- 70 g of sugar
- 50 g ground walnuts
- 20 g of unsweetened cocoa powder
- 1 packet of vanilla sugar
- a pinch of ground cinnamon
- zest of one lemon
Nut filling
- 150 g ground walnuts
- 50 g of powdered sugar
- 70 ml of rum
- 1 packet of vanilla sugar
- currant jam
Chocolate cream
- 200 g of butter
- 75 g of powdered sugar
- 10 ml of rum
- 2 eggs
- 1 tbsp unsweetened cocoa powder
- 0.5 package of vanilla sugar
Chocolate topping
- 100 g of cooking chocolate
- 50 g of butter
Method:
- Preheat the oven to 175°C.
- Mix sifted flour, sugar, melted butter, eggs, nuts, cocoa powder, lemon zest and cinnamon and work into a smooth dough.
- Press the dough piece by piece into the cupcake molds.
- Place in the oven and bake for approximately 10-15 minutes.
- After baking, let the cupcakes cool.
- In the meantime, prepare the filling by mixing ground nuts with sugar, rum and vanilla.
- Then spread the inside of the cups with currant jam and apply the nut filling.
- Using a pastry bag with a decoration, pipe the cream onto the filling.
- Just beat the eggs with the sugar, then add the whipped butter with the cocoa and rum.
- Let it harden in the fridge and in the meantime melt the butter with the chocolate in a water bath.
- Lightly cover the cupcakes with the chocolate glaze and put them back in the fridge.
- At the end, you can sprinkle the Christmas cookies with grated nuts and a decoration.
