How to bake the best sandwich crust?
First, make sure your bread is done.
Experienced bakers can tell by tapping the loaf. An easier way is to measure the lid’s temperature in the loaf’s center. A loaf of plain flour is considered fully baked when you measure the temperature between 180°F and 190°F.
Lids baked with whole wheat flour should reach a temperature of 199°F to 205°F.
Do not remove the lid from the mold too soon.
Hands off, at least until it cools down a bit. Let it stand in the mold with a lid on for 5-10 minutes. After a longer time, the sides and bottom crust will toast, making it burnt rather than crispy.
Do not cut the bread when it is hot.
Cutting hot bread will evaporate much of the moisture from the loaf. In addition, when slicing bread, you will naturally apply a little pressure, both with your hand and with a knife, so it will always be more fluffy than it should be.
