Gluten-free Gingerbread Cookies with sugar coating

Enjoy our gluten-free version of the cookies. You can cut them into star shapes and give them away as a Christmas gift, or you can use them to decorate your tree.
Ingredients
- 3/4 cup salted butter
- 3 tablespoons of maple syrup
- 3/4 cup dark sugar
- ½ teaspoon of soda
- 1½ tablespoons of ground ginger
- 1 teaspoon of ground cinnamon
- 2 cups gluten-free plain flour
For the frosting
- 1/2 cup powdered sugar
Method
- In a small saucepan, heat the butter, syrup, and sugar until melted.
- In a large bowl, combine the baking soda, ginger, cinnamon, and flour.
- Pour in the melted butter mixture and mix and work into a dough with your hands.
- Roll out the dough to 0.2-inch thickness and put it in the fridge for 1 hour to harden.
- Preheat the oven to 340°F and line a large tray with baking paper.
- Take the rolled dough out of the refrigerator and cut out the gingerbread.
- Place in the oven and bake for 10-15 minutes, as needed.
- In the meantime, prepare the frosting by mixing the powdered sugar with 1-2 tablespoons of water.
- Decorate the cooled gluten-free gingerbread.
