Gluten-free Christmas cookies made from coconut flour

The delicious taste of this candy is provided by the combination of coconut, vanilla, and chocolate. You will see that everyone will like these rolls.
Ingredients:
- 3/4 cup coconut flour
- 1/3 cup undiluted coconut oil
- 1/4 cup cane sugar
- 1/4 teaspoon of vanilla extract
- 1 egg
For the frosting
- 1/3 cup dark chocolate
- 1 tbsp crushed pumpkin seeds
- 1 teaspoon of desiccated coconut
Method:
- Put all the ingredients in a bowl and mix until a crumb is formed.
- If the mixture is crumbly, add a small amount of coconut oil.
- Shape the mixture into a ball and wrap it in cling film.
- Refrigerate for 15 minutes to set the dough.
- After that, the dough will be firm but still crumbly when you take it. It’s alright.
- Take one tablespoon of the dough and shape it into a ball, then turn it into a rolling pin to create a roll shape.
- Repeat the process with the remaining dough.
- If desired, sprinkle the rolls with coconut flour before baking.
- Place the coconut flour Christmas cookies on a baking sheet lined with paper.
- Bake in a preheated oven at 350°F for 6 to 8 minutes until light golden brown on the sides.
- Cool and then decorate the cookies with melted chocolate, coconut, and pumpkin seeds.
