Gluten-free Almond Flour Gingerbread Cookies

With this recipe for gluten-free gingerbread, you will give traditional Christmas cookies the perfect texture and taste.
Enjoy these gluten-free cookies, dusted with powdered sugar, or decorated with frosting.
Ingredients
- 3 cups gluten-free plain flour
- 1 cup almond flour
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 1/2 teaspoons ginger
- 1 teaspoon of cinnamon
- 1/4 teaspoon cloves
- 3/4 cup unsalted butter
- 1 cup brown sugar
- 1 large egg
- 1 1/2 cup molasses
- 1 teaspoon of pure vanilla extract
Method
- Whisk the first 8 ingredients in a medium bowl.
- Beat the butter and brown sugar until light and fluffy.
- Add the eggs, molasses, and vanilla and mix until well combined.
- Add the dry ingredients and mix.
- Wrap the dough in foil and refrigerate for 1 to 2 hours or chill overnight.
- Preheat the oven to 350°F.
- Take the dough out of the fridge and roll it out.
- Cut out various Christmas shapes from the dough and place them on a baking sheet lined with parchment paper.
- Let the sheets with the cut dough cool for about 10 minutes before baking.
- Then bake for 15 minutes.
- Allow to cool completely before decorating with frosting and sprinkles or dried fruit.
The gluten-free dough always benefits from resting overnight in the fridge, so if you can prepare
the dough a day ahead, we recommend doing so.
