Glazed Lemon Cookies

Glazed Lemon Cookies feature buttery, citrusy, soft, and perfectly sweet cookies topped with a lemon glaze.
These are the best lemon cookies, as they come together quickly, contain simple ingredients, and don’t even require chilling.
Ingredients
Dough:
- 2 cups all-purpose flour
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 1 tablespoon of lemon zest
- 2 tablespoons of lemon juice
- ½ cup unsalted butter (let melt at room temperature)
- 1 cup of sugar
- 1 large egg
- 1 teaspoon of vanilla extract
Lemon Frosting for Christmas Cookies:
- ½ cup of water
- ¾ cup powdered sugar
- 1 teaspoon of lemon juice
Method
Dough:
- Before preparing the dough, preheat the oven to 350°F.
- Whisk together the flour, baking soda, salt, and lemon zest in a medium bowl.
- In another bowl, beat together the butter and sugar using an electric mixer. Beat until the mixture is fluffy.
- Add eggs, vanilla extract, and lemon juice. Mix well until everything is combined.
- Slowly mix the mixture from the second bowl with the mixer (on low speed) into the medium bowl and carefully mix with the flour mixture.
- Using a medium spring-loaded cookie scoop, drop 1 ½-tablespoon sized balls of cookie dough onto prepared baking sheets, spacing 2 inches apart. Roll each ball with your palms, then gently flatten the dough to about 1/3-inch thick using your palm.
- Place the cookies in the oven and bake until the edges are golden. It will take about 15-20 minutes.
- Then, remove the cookies and let them cool for 2 minutes. Spread them with the prepared lemon glaze, and you’re done.
Lemon Frosting for Cookies:
- Pour the water into the bowl and slowly whisk the sugar into it.
- Whisk until the frosting becomes a smooth, thicker consistency. If necessary, sift the sugar before using.
- Add lemon juice to the mixture and stir.
- Spread the finished glaze on the cookies and let it harden. A beautiful, shiny glaze will form on it.
The topping can be used to cover Christmas lemon cookies or to dip them whole.
