Gingerbread from lard

Lard gingerbreads bring with them a typical aroma. There are many recipes for them, and everyone has their own trick.
In this case, it is a recipe using lard. Thanks to the lard, the gingerbread is immediately soft, and you do not need to bake it beforehand.
Ingredients:
- 4 1/2 cup of all-purpose flour
- 1 1/2 cup of powdered sugar
- 1/3 cup lard
- 2 spoons of honey
- 1 baking powder
- 1 teaspoon gingerbread spice
- a pinch of baking soda (on the tip of a teaspoon)
- 2 tablespoons of Dutch cocoa
- 5 eggs
For the frosting:
- 1 egg white
- 3/4 cup of powdered sugar
- a teaspoon of lemon juice
- 1 teaspoon of potato starch
Method:
- First, mix all the loose ingredients (flour, sugar, baking powder, spices, baking soda, cocoa).
- Add honey, 4 eggs, and lard (softened to room temperature).
- Knead the dough and let it rest for a while.
- Then roll it into a flat cake about 0.2 inches thick and cut out any shapes you like.
- Place on a tray lined with baking paper. an egg.
- Bake at 356°F for about 7 minutes and brush the still-warm gingerbread with the remaining beaten egg.
- Prepare the frosting by beating the ingredients, ideally with an electric beater. You can adjust the ideal density with the amount of lemon juice.
