You can easily replace the walnut filling with a softer almond filling. Try it out with this recipe.
Ingredients:
Dough
- 2 cups all-purpose flour
- 1 cup of butter
- 1 cup sour cream
- 4 egg yolks
- 1/2 package of baking powder
Almond filling
- 1 cup sliced almonds
- 1 cup of powdered sugar
- 4 egg whites
Method:
- Place softened butter, egg yolks, sour cream, flour and baking powder in a food processor.
- Work into a smooth dough.
- Shape the dough into small balls about the size of a walnut.
- Place the balls on a tray lined with baking paper or in a bowl on top of each other; they should not stick together.
- Put the tray or bowl in the fridge for at least an hour.
- In the meantime, whip the egg whites until stiff and gradually add the sugar.
- Then roll each ball into an oval shape.
- Spread the snow in the middle and sprinkle with a few almond slices.
- Use just enough egg white so that it doesn’t run out when gluing
- Fold the longer ends of the oval over and press together.
- Preheat the oven to 356°F and bake the cookies for 8-10 minutes until pink.
- After removing from the oven, sprinkle the cookies with powdered sugar.
