French tartlets with caramelized onions

French tartlets are known as sweet desserts but also as savory scones.

They are made as large round cakes in the form of these canapés. They are delicious, both warm and cold, and among the wonderful Christmas appetizers.

Ingredients:

For the dough:

  • 1 and ⅓ cup plain flour
  • ½ cup of butter
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 3-6 tablespoons of ice water

For the filling:

  • 1 tablespoon of olive oil
  • 6 medium red onions (sliced)
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons of brown sugar
  • 1 spoon of honey
  • salt and pepper
  • 1 cup of feta cheese
  • 1/2 cup of cream cheese
  • 1 egg
  • 2 tablespoons fresh parsley (chopped)

Method:

  • Add the flour to the food processor, sugar, and salt, and mix briefly.
  • Add half the butter and mix briefly. Then add the rest of the butter and mix briefly again.
  • Lumps of butter may remain but should be no larger than a large lentil.
  • Now add ice water two spoons at a time. Pay attention to the consistency; the dough should not be sticky.
  • Pat the dough prepared in this way into a bun, wrap it in cling film, and refrigerate it for at least an hour.
  • After cooling, leave the dough at room temperature for at least 10 minutes, and you can start rolling.
  • Find a pan about one time larger than the diameter of the muffin pan (such as a smaller bowl or a wider mug).
  • Cut out circles from the rolled dough.
  • Place the finished rounds in the muffin wells and spread them out nicely; the edges of the dough should peek out slightly.
  • Then, pierce the bottom of the dough with a fork and put it in the fridge with the baking pan before you prepare the filling.
  • Fry the onion in a little oil, stirring only occasionally; it takes 2-3 minutes.
  • Then cover the onion with a lid and let it simmer for another 8-10 minutes on low heat.
  • Add the sugar, balsamic vinegar, honey, a little salt and pepper, and cook for another 10 minutes until the onions are caramelized (stir occasionally).
  • Prepare the cheese filling. Beat both cheeses, eggs, and parsley to a smooth consistency.
  • Place a spoonful of onion on the bottom of each dough and spread the cheese mixture over it.
  • Bake at 347°F for about 20 minutes.
