Fluffy cottage cheese croissants

When you think of a croissant, the first thing that comes to mind is the butter. But you can also prepare them with the help of cottage cheese.

Ingredients:
- 1 1/2 cup of all-purpose flour
- 1 cup of semi-coarse flour
- 1 cup of cottage cheese
- 1/2 cup of sugar
- 1/2 tbsp of sunflower oil
- 1 tbsp of honey
- 0.2 oz of dry yeast
- 1 egg
- 1/2 vanilla pod
- zest of 1 lemon
- 1/2 teaspoon of salt
For smearing
- 1 egg
- 1 tbsp of milk
Method:
- Mix flour, sugar, yeast, and eggs in a food processor’s bowl.
- Add the grated lemon peel, vanilla seeds, and honey.
- Mix thoroughly with a robot until smooth.
- Only then add oil and salt.
- Then, knead for about 10 minutes, creating a smooth, elastic dough.
- Wrap the dough in cling film and leave to rise for about 2 hours until it doubles in size.
- After this time, turn the dough out onto a floured work surface and use a rolling pin to roll it out into a 0.2 inches thick rectangle.
- Cut the rectangle in half lengthwise and cut 10 triangles from each part.
- Then, roll the triangles into a roll.
- Place the croissants on baking sheets lined with baking paper and let them rise for 30-40 minutes, covered with a tea towel.
- Then brush them with a beaten egg to which you have added milk.
- Bake in an oven preheated to 356°F for approximately 15-18 minutes.
