Fluffy cottage cheese croissants

When you think of a croissant, the first thing that comes to mind is the butter. But you can also prepare them with the help of cottage cheese.

Ingredients:

  • 1 1/2 cup of all-purpose flour
  • 1 cup of semi-coarse flour
  • 1 cup of cottage cheese
  • 1/2 cup of sugar
  • 1/2 tbsp of sunflower oil
  • 1 tbsp of honey
  • 0.2 oz of dry yeast
  • 1 egg
  • 1/2 vanilla pod
  • zest of 1 lemon
  • 1/2 teaspoon of salt

For smearing

  • 1 egg
  • 1 tbsp of milk

Method:

  1. Mix flour, sugar, yeast, and eggs in a food processor’s bowl.
  2. Add the grated lemon peel, vanilla seeds, and honey.
  3. Mix thoroughly with a robot until smooth.
  4. Only then add oil and salt.
  5. Then, knead for about 10 minutes, creating a smooth, elastic dough.
  6. Wrap the dough in cling film and leave to rise for about 2 hours until it doubles in size.
  7. After this time, turn the dough out onto a floured work surface and use a rolling pin to roll it out into a 0.2 inches thick rectangle.
  8. Cut the rectangle in half lengthwise and cut 10 triangles from each part.
  9. Then, roll the triangles into a roll.
  10. Place the croissants on baking sheets lined with baking paper and let them rise for 30-40 minutes, covered with a tea towel.
  11. Then brush them with a beaten egg to which you have added milk.
  12. Bake in an oven preheated to 356°F for approximately 15-18 minutes.
