Fluffy Almond Meringues

Ingredients
- 4 egg whites
- 1 cup white sugar
- 1 ½ cups almond flour or more as needed
- ¼ teaspoon ground cinnamon
Method
- Preheat the oven to 300°F and line two trays with parchment paper.
- Whisk the egg whites in a bowl until stiff peaks form. Gradually add the sugar a teaspoon at a time and continue to beat on high speed.
- Mix the almond flour and cinnamon in a bowl and fold them into the egg-white mixture with a spatula. If the mixture is too thin, add more ground almonds.
- Using two teaspoons, place small scoops of the almond mixture 2 inches apart on the prepared baking sheets.
- Bake in the preheated oven until the meringues are lightly browned. It takes about 15-20 minutes.
- Carefully remove the candy from the tins and leave to cool on wire racks.
