Delicious Coconut, Vanilla and Pineapple Crescent Cookies

This unusual Christmas cookie melts in your mouth. Don’t be afraid of the unusual combination with pineapple. Try it, and you will fall in love with it!
Ingredients:
- 2 cups plain flour
- 3/4 cup finely shredded coconut
- 1 cup of butter
- 1/2 cup sugar
- 1/2 cup pineapple chunks in sweet pickle
- 1/4 cup cornstarch
- 1 teaspoon of vanilla
- 1/2 teaspoon of salt
- powdered sugar for sprinkling
Method:
- Preheat the oven to 400°F and line the trays with baking paper.
- Beat the butter, sugar, and vanilla until creamy in a bowl.
- In another bowl, mix the flour, cornstarch and salt.
- Add pineapple chunks and coconut to the butter mixture and mix thoroughly.
- Gradually add the flour mixture to the butter mixture until well combined.
- Store the resulting dough in the refrigerator for at least 1 hour.
- Preheat the oven to 340°F.
- Shape the dough into rolls and place them on a baking sheet lined with paper.
- Bake for approximately 20 minutes until golden.
Allow the coconut rolls to cool slightly, then roll them in powdered sugar.
