Crispy Almond Meringue

If you’re hesitant about making meringues, don’t worry!
These Almond Meringue Cookies are incredibly easy to make.
They have a light and crispy exterior with a slightly chewy center, making them irresistible little treats you won’t stop eating!
Ingredients
- 4 egg whites at room temperature.
- 1 cup of sugar
- ¼ teaspoon cream of tartar
- ½ teaspoon almond extract
Method
- Let the egg whites come to room temperature.
- When separating the whites and yolks, be careful not to get the yolk into the whites. Otherwise, the meringues could be difficult to work with.
- Beat the egg whites until foamy, and add the cream of tartar. Continue beating for another 15-20 seconds.
- Add sugar 1 tablespoon at a time until all the sugar is incorporated.
- Continue beating until stiff peaks form.
- Stir in the almond extract.
- Preheat the oven to 225°F and line 2 baking sheets with parchment paper.
- Put the meringue mixture into a pastry bag fitted with a plain tip and make 1-2 inches diameter meringues with a swirl on top.
- Bake for 1 hour, then turn off the heat and leave the meringues in the closed oven for several hours or overnight.
