Crisp rolls with cottage cheese

These butterless cottage cheese croissants are easy to make, fluffy, and delicious. They’re perfect for filling with jam or cream.
Ingredients:
- 1 1/2 cup all-purpose flour
- 1 1/2 cup semi-coarse flour
- 1/2 cup of cottage cheese
- 1/2 cup of sugar
- 1/2 cup of milk
- 1 egg
- 1/4 cup of sunflower oil
- 1 teaspoon of vanilla extract
- 0.5 oz of fresh yeast
- zest of one lemon
- powdered sugar for sprinkling
Method:
- Pour both sifted flours into a large bowl.
- Mix to make a well and add the eggs, oil, cottage cheese, lemon zest, vanilla extract, and sugar.
- Heat the milk slightly and dissolve the yeast in it.
- Pour the mixture into the bowl with the other ingredients.
- Mix thoroughly and start kneading by hand.
- Knead until you get a soft and compact dough.
- Once the dough is ready, place it in a lightly floured bowl, cover it with cling film, and leave it to rise until doubled in size, approximately two hours.
- Then, divide the dough into two parts and roll out a circle from each part.
- Divide the circle with a knife into eight triangles, which you roll up from the base to the tip, giving you the classic roll shape.
- Put the pastry on a baking sheet lined with baking paper and let it rise for another hour.
- Bake in an oven preheated to 356°F for about 25-20 minutes.
- After baking, let the cheese rolls cool, and sprinkle them with powdered sugar.
