Coconut Oatmeal Cookies

Oatmeal cookies are a year-round staple, but coconut gives them a Christmas twist.
Other times, you can also enhance the cookies with a little fragrant cinnamon.
INGREDIENTS
- 1/2 cup oat flakes
- 1 egg
- 5 tablespoons of milk
- 1 tablespoon of honey or cane sugar
- 3 tablespoons of butter
- 1/4 cup of all-purpose flour
- handful of grated coconut
- 1/2 cup of dried fruit to taste (cranberries, raisins, apricots, plums, etc.)
Method:
- Mix all the ingredients, including the dried fruit cut into smaller pieces.
- Let the finished dough rest for a quarter of an hour.
- Shape the dough into balls of the same size with wet hands and flatten them on a baking sheet lined with baking paper.
- Press the balls on the tray slightly with your fingers.
- Bake the cookies at 350°F until they are slightly reddish.
