Coconut and lemon Christmas trees

Tasty Christmas pastries that you can decorate not only with coconut but also with almonds or nuts.
Ingredients:
- 1/2 cup plain flour
- 1/2 cup of coconut flour
- 1/2 cup of sugar
- 1/2 cup of butter
- 1 egg
- grated rind from 1 lemon
For the frosting
- 1 lemon (peel and juice)
- 1/2 cup of powdered sugar
- 1/2 cup of grated coconut
Method:
- In a medium bowl, mix the flour with the coconut flour.
- Rub the butter with sugar and grated lemon peel.
- Add the eggs and, finally, the flour.
- Mix everything well until a smooth dough is formed.
- Shape the dough into a ball and wrap it in cling film.
- Put in the fridge for 2 hours.
- Roll out the dough to about 0.2 inches in thickness and use a cutter to cut out the Christmas trees.
- Place the cut cookies on a baking sheet lined with baking paper.
- Bake for 12-15 minutes at 350°F.
- Leave to cool.
- In the meantime, prepare the coconut topping.
- Place powdered sugar, grated lemon peel, and 4-5 tablespoons of lemon juice in a bowl.
- The frosting should be smooth but not too runny.
- Coat the Christmas trees with the glaze and sprinkle with grated coconut.
