Coconut and lemon Christmas trees

Tasty Christmas pastries that you can decorate not only with coconut but also with almonds or nuts.

Ingredients:

  • 1/2 cup plain flour
  • 1/2 cup of coconut flour
  • 1/2 cup of sugar
  • 1/2 cup of butter
  • 1 egg
  • grated rind from 1 lemon

For the frosting

  • 1 lemon (peel and juice)
  • 1/2 cup of powdered sugar
  • 1/2 cup of grated coconut

Method:

  1. In a medium bowl, mix the flour with the coconut flour.
  2. Rub the butter with sugar and grated lemon peel.
  3. Add the eggs and, finally, the flour.
  4. Mix everything well until a smooth dough is formed.
  5. Shape the dough into a ball and wrap it in cling film.
  6. Put in the fridge for 2 hours.
  7. Roll out the dough to about 0.2 inches in thickness and use a cutter to cut out the Christmas trees.
  8. Place the cut cookies on a baking sheet lined with baking paper.
  9. Bake for 12-15 minutes at 350°F.
  10. Leave to cool.
  11. In the meantime, prepare the coconut topping.
  12. Place powdered sugar, grated lemon peel, and 4-5 tablespoons of lemon juice in a bowl.
  13. The frosting should be smooth but not too runny.
  14. Coat the Christmas trees with the glaze and sprinkle with grated coconut.
