Coconut and Almonds Stars

The coconut and almond flavors make this candy a great gourmet experience. Cane sugar can also be replaced with honey.
Ingredients:
- 1 and 1/2 cups almond flour
- 1/3 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon of salt
- 1/2 cup cane sugar
- 1 egg
- 3 tablespoons of melted and cooled coconut oil
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
For the frosting:
- 1 cup powdered sugar
- 2 tablespoons plant-based, almond or coconut milk
- 1/2 teaspoon of vanilla extract
- 1/8 teaspoon of almond extract
- pinch of salt
Method:
- Whisk together the almond flour, coconut flour, baking powder, and salt in a medium bowl.
- In another bowl, whisk the eggs, then add the sugar, coconut oil, vanilla, and almond extract.
- You can also use an electric mixer at this stage.
- Mix until the mass is completely combined.
- Add the dry and wet ingredients and mix until a thick batter forms.
- If the dough is sticky, add coconut flour one tablespoon at a time until it forms a ball, and the dough is easy to roll out.
- Place the dough on a work surface between two sheets of parchment paper.
- Roll out to a thickness of approximately 3 mm.
- Cut the dough using your favorite cutters, such as stars.
- Place the coconut stars on a baking sheet lined with baking paper.
- Bake in an oven preheated to 350°F for 8-10 minutes.
- While the cookies are cooling, prepare the frosting.
- Mix powdered sugar, vanilla, almond extract, and salt with vegetable milk.
- The frosting should be quite thick.
- If it is too thin, add more powdered sugar.
- Likewise, if it’s too thick, add more plant-based milk.
- After the coconut flour Christmas cookies have cooled, decorate them with the icing of your choice.
