Coconut and Almonds Stars

The coconut and almond flavors make this candy a great gourmet experience. Cane sugar can also be replaced with honey.

Ingredients:

  • 1 and 1/2 cups almond flour
  • 1/3 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup cane sugar
  • 1 egg
  • 3 tablespoons of melted and cooled coconut oil
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of almond extract

For the frosting:

  • 1 cup powdered sugar
  • 2 tablespoons plant-based, almond or coconut milk
  • 1/2 teaspoon of vanilla extract
  • 1/8 teaspoon of almond extract
  • pinch of salt

Method:

  1. Whisk together the almond flour, coconut flour, baking powder, and salt in a medium bowl.
  2. In another bowl, whisk the eggs, then add the sugar, coconut oil, vanilla, and almond extract.
  3. You can also use an electric mixer at this stage.
  4. Mix until the mass is completely combined.
  5. Add the dry and wet ingredients and mix until a thick batter forms.
  6. If the dough is sticky, add coconut flour one tablespoon at a time until it forms a ball, and the dough is easy to roll out.
  7. Place the dough on a work surface between two sheets of parchment paper.
  8. Roll out to a thickness of approximately 3 mm.
  9. Cut the dough using your favorite cutters, such as stars.
  10. Place the coconut stars on a baking sheet lined with baking paper.
  11. Bake in an oven preheated to 350°F for 8-10 minutes.
  12. While the cookies are cooling, prepare the frosting.
  13. Mix powdered sugar, vanilla, almond extract, and salt with vegetable milk.
  14. The frosting should be quite thick.
  15. If it is too thin, add more powdered sugar.
  16. Likewise, if it’s too thick, add more plant-based milk.
  17. After the coconut flour Christmas cookies have cooled, decorate them with the icing of your choice.
