Cocoa-dimpled cookies with marshmallows and mint

Are you a fan of mint chocolate and marshmallows? Well, you will definitely like this. Try this experiment; maybe baking this cookie will become your Christmas tradition.
Ingredients:
- ⅓ cup of grated chocolate
- 6 tablespoons of softened butter
- ¾ cup brown sugar
- 1 large egg
- ¼ teaspoon peppermint extract
- ¼ cup and 2 tablespoons of cocoa powder
- ¾ cup semi-coarse flour
- ½ teaspoon of baking powder
- ¼ teaspoon salt
For the filling:
- 6 large marshmallow candies
- crushed lollipops or peppermint candies for decoration
Method:
- Preheat the oven to 350°F and prepare two trays lined with baking paper.
- Melt the chocolate over a water bath.
- In a medium bowl, beat the butter with the sugar until smooth and fluffy (2-3 min.)
- Add the cooled chocolate, eggs, mint extract and beat until smooth.
- Combine the remaining dry ingredients in another bowl, then add them to the whipped mixture.
- Mix everything thoroughly.
- Shape the dough into balls, place them on a baking sheet, then press them with your hand and make a well in the middle with your finger.
- Bake for 8 minutes.
- Meanwhile, cut the marshmallows into smaller pieces.
- After 8 minutes, remove the cookies from the oven, pour marshmallows into the wells, and put them back in the oven for another 3-4 minutes.
- You can sprinkle pieces of lollipops or candies on the baked goods.
