Christmas Unbaked Rum Balls

Rum balls take less than 20 minutes to throw together, or even less if you involve the kids! No baking is required, and no need to melt any chocolate! You only need a few ingredients to make them, which combine to create a rich, decadent flavor!
Ingredients
- 9 ounces vanilla wafers/cookies, or plain chocolate cookies
- 14 ounces sweetened condensed milk (e.g., Nestle)
- 3 tbsp rum (optional)
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder (e.g., Hershey’s)
- 1/2 cup finely shredded or desiccated coconut
- pinch of salt
- 3/4 cup finely shredded or desiccated coconut (or more) for coating
Method
- Place the cookies in the ziplock bag, seal them, and crush them with the rolling pin.
- Alternatively, crush in the food processor until fine crumbs form. It’s OK if there are some slightly larger pieces.
- Add the crushed cookies, coconut, cocoa powder, condensed milk, rum, and vanilla to the large bowl.
- Mix the ingredients well using a wooden spoon, then your hands once it gets too thick.
- Mix in 1-2 tablespoons of milk if the mixture is too thick.
- Scoop out a tablespoonful of mixture and roll into a 1 – 1 1/2 inch ball.
- Roll the balls in coconut until completely covered
- Place the wrapped balls on a baking sheet.
- Refrigerate until ready to serve.
