Christmas gluten-free matcha rice flour cookies

Have you ever tried baking matcha-flavored cookies? They will have a typically delicate taste and aroma and be stylishly colored. Your cookies will, therefore, look interesting even without time-consuming decorating.

The dough for matcha cookies is very simple and consists of only healthy ingredients: whole-grain rice flour, maple syrup, coconut oil, egg, and, of course, matcha.

Ingredients:

  1. 2 cups of brown rice flour
  2. 1/4 cup of maple syrup
  3. 1/2 cup of coconut oil
  4. 4 teaspoons of matcha powder
  5. 1 teaspoon of baking powder
  6. pinch of salt
  7. 1 egg

Method:

  1. Mix rice flour with matcha, baking powder, and salt in a bowl.
  2. Add maple syrup, coconut oil, and eggs and mix to make a smooth dough.
  3. On a floured work surface, roll them out into a roughly 0.1-inch-thick pancake and cut out the desired shapes with molds.
  4. Place the dough on a tray lined with baking paper and bake in a preheated oven for 10 minutes at a temperature of 350°F.
  5. You can sprinkle the finished cookies with matcha powder or cover them with matcha chocolate.
