Christmas gluten-free almond flour stars

Ingredients:
- 1/2 cup softened butter
- 1/4 cup coconut oil (you can substitute butter if you don’t have it)
- 3/4 cup sugar
- 2 eggs
- 2 teaspoons of vanilla
- 1/4 teaspoon of almond extract
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 2 +1/4 cup almond flour
- 1/2 cup coconut flour
Method:
- Beat the butter, coconut oil, and sugar until smooth.
- Add eggs, vanilla, and almond extract and mix thoroughly.
- In another bowl, mix together the baking soda, salt, almond, and coconut flour, then add the flour mixture to the butter mixture.
- Work out the dough and let it rest in a plastic bag in the refrigerator until the next day.
- Roll out the hardened dough on a work surface dusted with coconut flour to a thickness of about 0.1 inch and cut stars out of it.
- Work quickly to keep the dough cold. If it becomes too soft, put it in the freezer for 10 minutes.
- Preheat the oven to 340°F.
- Bake for 13-15 minutes until the cookies are lightly golden.
- At the end, you can spread it with your favorite topping.
These cookies are absolutely exceptional.
Crispy on the surface, unexpectedly soft inside, tastes like butter, thanks to coconut flour.
Almond candy is also gluten-free, which will be welcomed by all those who want to avoid gluten.
