Chocolate Coconut Balls

Coconut balls don’t have to be white. Try them in this unconventional dark variant, too. You will like it.

Ingredients:

  • 1 cup vanilla wafers (waffles with vanilla cream)
  • 1 cup dark chocolate
  • 1/2 cup unpeeled natural almonds
  • coconut flour
  • grated coconut for coating

Method:

  1. Blend the vanilla wafers in a food processor.
  2. Melt the chocolate in a water bath.
  3. Mix the crushed wafers with the melted chocolate and mix thoroughly.
  4. Add a small amount of coconut flour if the mixture is too thin.
  5. Place the mixture in the refrigerator for approximately 30 minutes.
  6. In the meantime, scald the almonds with boiling water and peel them.
  7. Then, remove the mixture from the fridge and use a spoon to remove a piece.
  8. Lightly flour your hands in coconut flour to shape the balls better.
  9. Place the almonds in the mixture and roll into a ball in the palms of your hands.
  10. Finally, wrap the coconut ball in grated coconut.

Store balls in an airtight container in the refrigerator or freezer. The balls are delicious when kept in cold place.
