Chocolate Cherry Crinkles

Chocolate Cherry Crinkles – a chocolate crinkle cookie with diced maraschino cherries. If you like chocolate-covered cherries, this cookie is for YOU!

The great thing about this recipe?
You only need ONE bowl! You don’t need to get out your mixer to make them, either.

Ingredients

  • ½ cup butter
  • ¾ cup granulated sugar (for the dough)
  • 1 large egg
  • 20 Maraschino cherries drained and quartered
  • ½ teaspoon of vanilla extract
  • ½ teaspoon of almond extract
  • 1 teaspoon red food coloring
  • ¾ cup coarsely chopped dark chocolate
  • ½ cup of cherry jam
  • 1 + ¾ cup of all-purpose flour
  • ¾ teaspoon of baking powder
  • ¼ teaspoon salt
  • ½ cup granulated sugar (for coating)
  • ½ cup powdered sugar (for coating)

Method

  • In a large bowl (or a stand mixer), beat the butter with the granulated sugar until light and fluffy.
  • Whisk in eggs, cherry jam, vanilla extract, almond extract and red food coloring
  • Gradually add the dry ingredients (flour, baking powder, and salt) until everything is well combined and you have formed a dough.
  • Stir in the chocolate and cherries.
  • Cover the bowl with cling film and place in the fridge to cool for at least 30 minutes.
  • Preheat the oven to 325°F and line the trays with baking paper.
  • Scoop the dough into 1-tablespoon portions and form balls.
  • Dip each ball first in granulated sugar to coat, then in powdered sugar.
  • Shake off excess powdered sugar.
  • Place covered dough balls onto a prepared baking sheet about 1 inch apart.
  • Bake for 13-15 minutes, until the crinkles crackle.
  • Allow the crinkles to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  • Store cooled crinkles in an airtight container at room temperature for 3-4 days.
