Drunk cookies is a popular term for all Christmas pastries to which alcohol is added. The most used types of alcohol are rum, egg cognac and griotka.
Ingredients:
Dough for cupcakes
- 200 g plain flour
- 125 g of butter
- 100 g of sugar
- 60 g ground walnuts
- 1 egg
- 1 tbsp unsweetened cocoa powder
- a pinch of ground cinnamon
Filling
- 150 g ground walnuts
- 50 g of powdered sugar
- 50 ml of rum
- 1 teaspoon of vanilla sugar
- currant jam
Cream and frosting
- 150 g of butter
- 75 g of sugar
- 2 eggs
- 2 tablespoons of unsweetened cocoa powder
- 1 teaspoon of vanilla
- chocolate topping
Method:
- Preheat the oven to 175°C.
- In a large bowl, mix all the ingredients for the dough, i.e. flour, sugar, eggs, melted butter, ground nuts, cocoa and cinnamon.
- Knead into a dough, which you then use to stretch the baking tins by hand.
- Place in the oven and bake for approximately 10-15 minutes.
- While the Izidor cupcakes are cooling, prepare the nut filling.
- Mix ground nuts, both types of sugar and rum in a bowl.
- Spread the inside of the cupcakes with currant jam and place a ball of walnut filling inside.
- Finally, beat the eggs with sugar over steam and then beat in the softened butter and cocoa.
- Apply the resulting cream to the cupcakes using a decoration, let it harden and then pour the chocolate glaze over it.
- If desired, you can decorate the cookies with a piece of walnut.
