Baked Carp in Butter

Ingredients
- 1 fresh gutted carp ( you can make 7-8 pieces)
- salt
- freshly ground pepper
- flour
- frying oil
- 1/2 cup water
- 1/2 cup butter
Method
- Wash the carp, cut off the head and set it aside to make fish soup if you like.
- Cut the carp into horseshoes, dry them with a paper towel, salt, season with freshly ground pepper and coat in flour. Set aside for a few minutes.
- Fry the rings in sections until golden brown in hot oil and immediately place them in the baking dish where you will serve the carp to the table. Pour the water into the bottom of the bowl, put butter on top, or arrange parsley sprigs.
- Cover the bowl with a lid or foil and place in the oven, preheated to 400°F and bake covered for approximately 30 minutes.
- Then remove the lid, remove the parsley and bake the carp for another 10 minutes until the surface is crispy.
- Serve sprinkled with fresh parsley or coarsely ground chili.
- You can serve the finished carp only with your favorite pastry or you can add potatoes boiled in their skins to it.
