Almond Meringues with Caramel

If you prepare this recipe, you can be sure you will have a unique candy on the table that you don’t see so often in other households.
The candy is beautifully soft and sinfully good.

Ingredients
Dough
- 1/2 cup whole almonds without skin, roasted and finely chopped
- 3 egg whites
- 1/4 teaspoon salt
- 2/3 cup granulated sugar
Caramel
- 3/4 cup granulated sugar
- 1/4 cup warm water
- 1/3 cup oil-based liquid whipping cream
- 2 tablespoons margarine (use soy-free margarine if needed)
Method
Meringues
- Preheat the oven to 240°F. Line a large baking sheet with parchment paper.
- In a stand mixer fitted with a whisk attachment, whip the egg whites with the salt until foamy. Gradually beat in the sugar, about two tablespoons at a time, until stiff peaks form. Stir in two-thirds of the almonds.
- Put the meringue mixture in a pastry bag with a regular tip, and make meringues 1-2″ in diameter, with a swirl on top.
- Bake in the center of the preheated oven for 40-50 minutes or until crispy. Leave to cool on the baking sheet on a wire rack.
Caramel
- In a saucepan, stir the sugar and water over low heat until the sugar dissolves.
- Bring the sugar to a boil, simmer gently, and brush the sides of the pot with a brush dipped in cold water for about seven minutes or until the mixture turns a dark amber color.
- Turn your face away and immediately pour in a third of the whipped cream – the caramel may sizzle for a while. Cook for another minute or two or until all the solidified caramel has melted.
- Stir in the margarine and let cool.
- Decorate the meringues with the finished caramel according to your taste.
