Almond gluten-free circle cookies with matcha

Ingredients:
For the dough:
- 2 cups of almond flour
- 1/4 cup of maple syrup
- 1/4 cup of unsweetened applesauce
- 1 teaspoon of baking powder
- pinch of salt
- 1 teaspoon of vanilla extract
For the frosting:
- 1 cup of melted coconut butter
- 1/4 cup of maple syrup
- 1/4 cup of almond milk
- 1 teaspoon of matcha powder. (If you don’t like the taste of matcha, feel free to dismiss it and prepare the topping without it.)
Method:
- Mix all the listed ingredients in a bowl and make the dough.
- Preheat the oven to 340°F.
- Dust the work surface with almond flour and roll out the dough to a thickness of 0.1 inches.
- Cut out circles from the dough.
- Transfer the cookies to a baking sheet lined with parchment paper using a spatula.
- Bake for 12-14 minutes until the cookies are golden brown around the edges.
- Leave to cool.
- Mix melted coconut butter, maple syrup, a little milk, and matcha powder for the frosting.
- Slowly add the milk until the frosting is smooth and spreadable.
- Spread the icing on the rounds, and before it sets, sprinkle with coconut, pistachios, pumpkin seeds, or any of your favorite sprinkles.
