Almond gluten-free circle cookies with matcha

Ingredients:

For the dough:

  • 2 cups of almond flour
  • 1/4 cup of maple syrup
  • 1/4 cup of unsweetened applesauce
  • 1 teaspoon of baking powder
  • pinch of salt
  • 1 teaspoon of vanilla extract

For the frosting:

  • 1 cup of melted coconut butter
  • 1/4 cup of maple syrup
  • 1/4 cup of almond milk
  • 1 teaspoon of matcha powder. (If you don’t like the taste of matcha, feel free to dismiss it and prepare the topping without it.)

Method:

  • Mix all the listed ingredients in a bowl and make the dough.
  • Preheat the oven to 340°F.
  • Dust the work surface with almond flour and roll out the dough to a thickness of 0.1 inches.
  • Cut out circles from the dough.
  • Transfer the cookies to a baking sheet lined with parchment paper using a spatula.
  • Bake for 12-14 minutes until the cookies are golden brown around the edges.
  • Leave to cool.
  • Mix melted coconut butter, maple syrup, a little milk, and matcha powder for the frosting.
  • Slowly add the milk until the frosting is smooth and spreadable.
  • Spread the icing on the rounds, and before it sets, sprinkle with coconut, pistachios, pumpkin seeds, or any of your favorite sprinkles.
