A simple recipe for a Christmas appetizer – bruschetta with tomatoes

Looking for something really quick and good? Then don’t hesitate to try this Italian delicacy. Tomatoes are very healthy and rich in vitamin C. This will help you make better use of the iron that you will enjoy in other courses.
Ingredients:
- 1 large onion
- 6 medium tomatoes
- 2 cloves of garlic
- olive oil
- salt and pepper
- baguette or toasted bread
- dried parsley
- fresh basil
Method:
- Finely chop the onion and fry it in olive oil.
- Finely chop one clove of garlic and add to the onion.
- Wash the tomatoes, cut them into cubes, and add them to the vitrified onions.
- Simmer the tomato until it softens, stirring occasionally, until the hanging part of the juice is scalded.
- Finally, season them with salt and pepper.
- Cut the baguette into slices and toast until crispy in the toaster.
- Press the second garlic clove into a small bowl, add parsley and 2 tablespoons of olive oil.
- Brush each toasted baguette slice with the prepared herb oil and spread the tomato mixture on top.
- Use a basil leaf to garnish each piece.
